This wine always exhibits the full spectrum of sauvignon blanc varietal characters from green, fresh herbal notes though to lime, passionfruit and tropical fruits. The palate echoes these fruit characters with the addition of a zesty acidity and a wonderful chalky texture which is one of the hallmarks of this block.
This wine will possibly be at its best in about 12 months time. Enjoy over the next few years.
Shellfish (especially oysters)! Or any seafood that is simply prepared with just a squeeze of lemon and hint of seasoning. Also delicious with spicy foods, goat’s cheese, salads, asparagus and other vegetables. It also provides a lovely contrast to richer foods such as patés, terrines and parfaits.
