<\/strong><\/p>\n\n\n\n<p><strong>Ingredients: <\/strong><\/p>\n\n\n\n<p>Extra virgin olive oil (EVO) <\/p>\n\n\n\n<p>1 medium onion or 3 shallots, chopped <\/p>\n\n\n\n<p>1-2 cloves of garlic, chopped <\/p>\n\n\n\n<p>2 cups Ferron risotto rice <\/p>\n\n\n\n<p>100ml white wine, at room temperature (optional) <\/p>\n\n\n\n<p>2 cups chicken or vegetable stock, simmering <\/p>\n\n\n\n<p>2 cups hot water <\/p>\n\n\n\n<p>Salt and freshly ground black pepper <\/p>\n\n\n\n<p>Parmigiano Reggiano, grated<\/p>\n\n\n\n<p><br><strong>Method: <\/strong><\/p>\n\n\n\n<p>In a heavy-based saucepan heat a little EVO and saut\u00e9 the onion and garlic until soft (the \u2018soffrito\u2019).      Add the rice and stir continuously for about 3 minutes (\u2018toasting\u2019).  Add the wine, then let evaporate.   Add all the hot stock and water, stir gently, and bring to a simmer. Cover and cook for about 15 minutes. <\/p>\n\n\n\n<p>While the risotto is cooking, prepare any other ingredients of your choice. <\/p>\n\n\n\n<p>Once the rice has cooked, add any other ingredients. <\/p>\n\n\n\n<p>Season and rest for a few minutes off the heat, then add a generous handful of Parmigiano Reggiano and \u2018mantecare\u2019 &#8211; stir the risotto off the heat to release the natural starches which make it creamy. <\/p>\n\n\n\n<p>Serve with extra Parmigiano. <\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Serving suggestions: <\/strong><\/p>\n\n\n\n<p>Drizzle simply with Giusti balsamic. <\/p>\n\n\n\n<p>Stir through any of our pestos or pastes. <\/p>\n\n\n\n<p>Soak dried porcini mushrooms with the hot stock before adding to the rice.
